One of the underlying causes of Eosinophilic Gastroenteritis is food sensitivity/allergy, in this case elimination diet is necessary to determine if the food is the cause, and which foods cause the reaction.
One way to do elimination diet is to use "hypoallergenic" diets with hydrolyzed protein such as Hill's z/d or Royal Canin Ultamino, another way is to use "novel protein" diets, which is basically a diet based on protein source your dog hasn't eaten, and carb source which doesn't contain gluten, like rice or potato.
Due to the fact that it's based on Salmon and rice it can be used as novel protein in elimination diet trials, if the cause of your dogs problem is suspected to be food allergy/intolerance, unless of course you feed salmon to your dog regularly.
