Bison are a popular game meat choice and in my opinion, rival beef in many ways. Bison meat is leaner than beef, maintaining a fat level of 2% as opposed to the 15%-20% fat level you find in beef meat. This is partly because Bisons are very active animals, which in turn reduces the amount of fat that develops in the meat.
Our Bison herd was 100% grass fed, was never force fed or given any hormone injections. They would consume about 10-12 gallons of water every day. A great thing about Bison is that they don't overgraze, which means that they tend to eat about 1/3 less food than other bovine animals.
