One of the best and easiest fish for starters

I had always Guppy when I was younger and still in school. Those fish are the easiest to handle. Right now my niece got an aquarium as present and like most 13 years has low attention span. So I take care of them besides her mother for most of the time.
The good thing, those fish breed like crazy and won't die easily despite the kids non existing care. You can feed them once a day and only need to clean on a need to do basis.
All the breeding and inbreeding causes a lot of mutation. That can be a bit disturbing for children and Guppy are rather cannibalistic and eat the smaller ones, dead fish and attack each other from time to time.
After a week or two you may have a third more or third less fish than before in your aquarium.
